The SUNY Empire State College Plaza Office in downtown Albany was transformed into a cooking show recently as Mike Russo ’10 whipped up a variety of healthy and tasty recipes to serve at Super Bowl parties this year. Part of the Plaza workshop series for state workers, Russo’s cooking demonstration featured quick-and-easy recipes for fruit salsas, wild mushroom paté, vegetarian chili and an assortment of personal-pan pita pizzas.
Eager members of the audience lent a hand grating, chopping and mixing the ingredients while Russo effortlessly sautéed wild mushrooms in one pan and stirred an aromatic chili in another – spicing up his presentation with a healthy dose of nutritional advice and culinary tips. After the cooking was wrapped up, the audience indulged on samples of all the dishes that were prepared, topped off with a dessert of pumpkin pie frozen yogurt.
Russo is a nationally acclaimed host of cooking shows aimed at youngsters and currently serves as the director of U.S. Government Relations for GLOBALFOUNDRIES.
